Lapis Haw Flakes. Yippie!

I must say this is a personal accomplishment for me, in baking. I mean, I usually would never, EVER, attempt to bake anything which has more than.. urm 5 steps I would say? And look at me now.. baking kek lapis youuu!!! This is what u get when u're surrounded by bakers who attempted out-of-this-world recipes, failing a few times and still try their hands to improve and here I am, asyik dok buat cupcakes je... hehe...

Actually I baked this for my SIL who loves kek lapis masam manis. This recipe is similar to what my MIL used to bake for her, except her recipe calls for biskut soda instad of biskut marie. Thanks to Rima who always has something to share, always feeding my eyes and computer srcreen with her fabulous bakes, and KG whom I called just before I reached home to bake this baby. Without you fabulous girls, I would never have the courage to attempt this :)

The recipe is fail-proof I think. The only thing is that u'll have to spend about 2 solid hours layering and layering and layering... phew..

Recipe from Rima and The Kitchen Guardian.

Kek Lapis Haw Flakes

Ingredients

450g butter (I used SCS salted)
210g sugar (I used 1 cup minus 2 tablespooons)
10 eggs grade A
300g Marie biscuits, finely ground (Tiger brand comes in a convienient 300g pack. yay!)
300g sweetened condensed milk
85g sekaya
1 tsp vanilla essence
1 tsp baking powder
2 packs haw flakes about 200 pieces

Food colouring (I used Wilton's rose pink and lemon yellow)

Method

1.Preheat oven. (mine's at 165 deg C)
2.Whisk butter and sugar until light and fluffy, add eggs one at a time, and continue to whisk at high speed
3.Add in vanilla
4.Turn speed to low and add in condensed milk and sekaya (pls dont lick your fingers!)
5.Fold in the biskut Marie that you grind earlier.
6.Divide batter into equal parts depending on how many colors u want. I did 2 portions.

7.Start layering.
8.Bake 2 layers of each color, the second layer spread the haw flakes.

9.Once all done, cover the top with an aluminium foil and bake using upper and lower heat at 150celcius for another 10 or 15 minutes.

10. Adore them layers cukup2.. then..
11. Eat! and dont forget to Pray and Love!
