Congo Bars in da House!

I've been practically dreaming of baking this since KG posted the recipe on her blog. i'm also a frequent to Bakerella's site but i'm always put off by her recipe coz they seem so... sweet.. as in too much sugar :-P i'm lucky to have friends who bake and always want to try out new recipes and most importantly, share! jadi saya yang agak malas ni, cuma akan try kalau ada yg dah try and the recipe's proven sedap jelah.. kih kih kih.. malas kan?

so here's the recipe for congo bars, my version :) of course i always convert the measurements to 'cups' coz i hate measuring by weighing! hahahaha.... for me, still kinda sweet, so next time i'm gonna reduce a lil bit of the sugar (KG actually reduced to 12oz, i reduced to 8oz (1 1/2cup), but i will reduce to 1 cup for my next attempt.. but i assure u, resepi ni sedap! (cuma tak boleh makan byk coz manis..)


Congo Bars
2 3/4 cup flour (tepung gandum biasa)
2 1/2 tsp baking powder
1/2 tsp salt
2/3 cup butter
8oz light brown sugar (equals to 1 1/2cup)
3 large eggs
1 tsp vanilla
2 cups chocolate chips
1 cup pecans (i didn't use this)

Sift flour, baking powder and salt into a large bowl. Set aside.

Stir brown sugar into softened butter (room temp) in another large bowl until butter disappears.
(I used a wooden spoon)
Add eggs one at a time to butter mixture and stir well after each egg (using the same wooden spoon).
Add vanilla, chocolate chips and nuts. Mix well. (also using spoon)

Add dry flour mixture and stir until well combined. (also using spoon)

Bake in a 13/9 inch pan at 170C for about 30 minutes or until the top is golden brown.
Make sure you don’t over bake. ( i baked exactly 30 mins at 165C)


I really like the texture.. crunchy on top but chewy inside.. i think with pecans, it will taste even better! but pecans are so expensive! hehehehe... maybe for raya i'll make with pecans or cashews.. i will definately make this again and again.. so easy and exclusive looking.. if u bring this to kenduri, sure people will bodek u for the recipe! hehehe...

*so far the best choc chips i bought were from MyChoice bakery in S7.. kedai2 lain yg i pernah beli choc chips dia tasteless la..

this is a killer...the rasa and the calories...but what the heck sementara sihat makanlah kan, but in moderation!

betul, recipe ni best sgt! senang pulak tu x payah pakai mixer pun.. kacau2 je..

the truth is, i bukannyer reti sgt bab2 camera nie.. i pakai je ape lense ape yg dah mounted on the camera. gambar x terang, i adjust ISO, aperture, then main belasah je ambik :P

salam RSA, mychoice tu kat area pakli, khulafa' seksyen 7 tu.. dia deret pakli, tapu hujung belah sana... er.. ok ke direction i? kalau u familiar area s7 ni sure jumpe punyer..
